I’ll be honest, food and I are not friends these days (really months). Consequently, it’s hard to be inspired for meal planning. I pulled off August but I don’t think it’s going to happen in September – at least not a near dozen recipes. Instead I’ll offer one solid, delicious and EASY recipe you will not regret trying. I made this buttermilk chicken for Granny’s birthday dinner (with our favorite mac and cheese recipe, mashed red potatoes and steamed broccoli – in case you wanted a full meal) and it’s so good we’re making it again tonight for Mr. B.
We baked the chicken in lieu of using the grill. If you make it with the mac and cheese, I baked the chicken at 450 for 15 minutes and then lowered the temp to 400 and put the mac and cheese in with aluminum foil covering the top for 20 minutes. I removed the foil for 5 minutes before pulling out the mac and cheese and setting the broiler on low for a couple minutes for good measure. Eat and enjoy!
