Yesterday I had an impromptu Girls’ Night with Cara and Kristin. We ate outside, went in the pool and walked for ice cream. A perfect summer evening.
To accompany the plethora of leftover pulled pork, Cara brought a zucchini from her garden to make fries. I almost died when I saw the zucchini! It’s huge! She claims it’s organic but I’m suspicious…
Either way the fries were great and I still have half of the zucchini. Since Cara has even more in her garden I decided to check out Cooking Light‘s list of 75 zucchini recipes for ideas of what to do with it. Here are my top picks:
