Yesterday I had an impromptu Girls’ Night with Cara and Kristin.  We ate outside, went in the pool and walked for ice cream.  A perfect summer evening.

To accompany the plethora of leftover pulled pork, Cara brought a zucchini from her garden to make fries.  I almost died when I saw the zucchini! It’s huge!  She claims it’s organic but I’m suspicious…

Either way the fries were great and I still have half of the zucchini.  Since Cara has even more in her garden I decided to check out Cooking Light‘s list of 75 zucchini recipes for ideas of what to do with it.  Here are my top picks:

  1. Garden Harvest Cake
  2. Summer Squash Soup with Pasta and Parmesan
  3. Zucchini Oven Chips
  4. Summer Squash Ricotta Galette
  5. Garden-Style Lasagna
  6. Zucchini Lemon Muffins
  7. Pasta with Zucchini and Toasted Almonds
  8. Double-Squash Basmati Gratin
  9. Zucchini-Pecan Flaxseed Bread
I think I’ll start with the Zucchini Lemon muffins and the Summer Squash Soup with Pasta (I’ll probably throw in some shrimp so Danny will eat it).
