The wedding party brunch wasn’t my only hosting gig this weekend. I also assisted Aunt Margaret with a graduation dinner for Mom. I was tasked with decorations and appetizers. I selected simple snacks that could be easily eaten without utensils and cooked for the least amount of time at the same temperature. All three dishes cooked for 15 minutes at 375 degrees.
I did not want to monopolize Aunt Margaret’s kitchen or cause her stress about the time required to prepare the main dishes so I had everything prepared to go into the oven before I went to her house. This worked out really well and the appetizers were made without any disruption to her plans.
Spinach Artichoke Bites : Super simple and really popular. Fix the filling in advance. Have the dough in the cupcake pan and fill cups right before putting it in the oven.
Loaded Potato Rounds : Slice and boil potatoes in advance. Cook and chop bacon in advance.
Phyllo Wrapped Asparagus: My personal favorite. Steam asparagus in advance (this wasn’t part of the directions) and let cool. Spray phyllo sheets with butter and wrap asparagus.
