Chocolate Chip Oatmeal Cookies

I’m not a big cookie person but this chocolate chip oatmeal cookie is delicious.  It’s soft and chewy – a rarity with oatmeal cookies in my opinion.  The recipe is great but I made a couple of adjustments.  I used my favorite Trader Joe’s steel cut oats instead of old-fashioned rolled oats.  I think it elevates the flavor because they’re a bit denser.  Since I’m not a chocolate person I used 1 cup of chocolate chunks instead of 1 1/2 cups.  I brought the cookies to work and Gina and Sheila agreed it’s a good chocolate to oatmeal ratio.  The best thing about oatmeal cookies is that it’s easy to call them breakfast.

  1. I love oatmeal-chocolate-chip! I hate raisins and it's tough to find a good oatmeal cookie that doesn't have raisins… Guess I'll making my own and using this recipe 🙂
