Slowly but surely I’m forcing myself back to real life. As much as I would love to live in my baby bubble forever, I can’t. I’m grateful to have a few more weeks at home and I’m not going to wait until the last minute to prepare for life as a working mom.
Agenda items include:
- Organizing the house
- Creating a feeding/sleeping/pumping schedule
- Workout schedule
- Letting people (i.e. Mr. B) watch Lucas
- Meal planning
Meal planning has never been my strong suit and let me tell you our budget shows it. That said, finances is not the inspiration for this project. By the time we get home from work with Lucas we’ll have about two hours with him before he’ll need to go to bed. I do not want to spend any of those minutes at the store or putzing around in the kitchen.
I’m experimenting now with planning and prepping nutritious meals in advance so we can continue to eat well but save time.
This week’s menu items include:
Slow cooker Coconut Beef with Rice Noodles
Portuguese Chicken and Potatoes
Dessert for Dad: Mini Pinapple Upside Down Cake
