Now that we have our own yard, I’ve found a new appreciation for summer. I’ll take whatever chance I get to relax in the hammock, chill (baby) poolside and enjoy a BBQ. Last night we made the best dinner – delicious, easy and under $20 (no coupons)! We had enough food for six people (maybe more).
If you’re like me, the chicken marinade ingredients are pantry staples; therefore, not included in the cost of the meal. I prepped the chicken the night before so it was grill ready after work. Find the Huli Huli Chicken recipe here. I used the pineapple juice from the can (and grilled the pineapple) and used water instead of chicken stock.
$8 – 4lb chicken thighs
$2 – Pineapple (canned)
$3 – Zatarain’s Caribbean Rice Mix (2)
$6 – Chopped Sunflower Crunch Salad (2)
The cute plates are from Target’s impossible to resist dollar section – 2 for $3.
Add a cold beverage and a post-dinner ice cream cone and there’s nothing better.
