October Meals


I needed a break last week but I’m back at it and ready to enjoy my favorite month! My killer diet remains intact and I continue to find little to no pleasure in food; however, I can eat – progress! Our budget has been a disaster lately and we absolutely must do better. Being diligent with meal planning is essential and we are both committed to taking time each week to plan out meals. If it goes well I’ll do a follow up, if not – forget I mentioned it. Anyway, here are some meals we enjoyed last month and meals we plan to try this month.

  1. Crispy Coconut Kale with Roasted Salmon
  2. Corn, Cheddar and Scallion Strata
  3. Sausage, Spinach & Artichoke Pasta Casserole
  4. Lemon Butter Chicken
  5. Chicken Noodle Casserole
  6. Egg Salad with Pickled Celery and Dijon
  7. Pork-Fennel-Apple Roast
  8. Shrimp Fettuccine Alfredo 
  9. Deep-Dish Pizza with Turkey Sausage and Brussels Sprouts 
  10. Zucchini Rice Cheese Gratin
